Bu çalısmada, ülkemiz endüstriyel gıda ürünleri arasında önemli yeri olan
bulgurun üretim sürecinde, bugdayın kurutulması isleminin, geleneksel yöntemler
yerine akıskan yataklı kurutucuda gerçeklestirilmesi konu edilmistir. Bu amaçla kurulan
bir akıskan yataklı kurutucuda, bugdayın kuruma karakteristigine çesitli parametrelerin
etkileri deneysel olarak incelenmistir. Sonuçlar, mevcut matematik modeller ile
karsılastırılmıstır.
Deneysel çalısmada iç çapı 30 cm, yüksekligi 2.5 m olan bir akıskan yatak
kullanılmıstır. Yataga beslenen havanın debisi, fan motoruna kumanda eden bir AC
frekans konvertörü ile; sıcaklıgı ise, dagıtıcı plakanın hemen altına yerlestirilen 10 adet
2.5 kW gücündeki (toplam 25 kW) elektrikli ısıtıcılar ile kontrol edilmistir. Elektrikli
ısıtıcılardan birisinin gücü, bir varyak aracılıgı ile 0 ila 2.5 kW arasında
ayarlanabilmektedir. Akıskan yatagın karakteristiklerini belirlemek üzere, yatagın farklı
yüksekliklerine sıcaklık, basınç ve nem ölçerler yerlestirilmis ve bunlar bir veri toplama
sistemine baglanmıstır. Ayrıca, yatagın çesitli yüksekliklerinden alınan bugday
numunelerinde de nem oranı tayini yapılmıstır. Kurutma esnasında, bugdayın kuruma
hızına ve yatagın enerji sarfiyatına etki eden, kurutucu ortamın sıcaklıgı, bagıl nemi ve
hızı, akıskan yataga giren ürünün miktarı ve nem oranı gibi parametreler kontrol
edilmistir. Bu parametrelerin, bugdayın kuruma karakteristigine ve enerji sarfiyatına
etkileri arastırılmıstır. Bu enerji tüketimi, bulgur üretiminde kullanılan geleneksel
bugday kurutma sistemlerinin enerji tüketimi ile kıyaslanmıstır.
Kaynaklarda mevcut olan matematik modeller incelenmis ve elde edilen
deneysel veriler, bu modellerden elde edilen sonuçlar ile kıyaslanmıstır. Böylece,
akıskan yatakta kurutma için türetilmis olan matematik modeller irdelenmis; bu
çalısmada kurulmus olan fiziksel sistem ile uyumsuzlukları ve bunların sonuçlarda
dogurdugu farklılıklar yorumlanmıstır.
Drying of wheat during the production process of bulgur, an important industrial
food product of Turkey, in a fludized bed drier rather than conventional methods, has
been the concern of this study. Effects of various parameters on the drying
charactersitics of wheat has been investigated experimentally on a fludized bed drier
test system. Experimental results are compared with present mathematical models, as
well.
A fludized bed with 30 cm internal diameter and 2.5 m height has been utilized
in the experiments. The flow rate of air feed to the bed has beeen controlled by means
of an AC frequency converter; while its temperature was adjusted via 10 electric
heaters, each 2.5 kW (total 25 kW), installed beneath the distributor plate. The heating
power of one of the heaters could be adjusted between 0 and 2.5 kW by means of a
variac. Temperature, pressure and rh sensors are installed at various points of the
fluidized bed and are connected to a data acquisition system in order to determine its
characteristics. Humidity ratio of wheat samples taken at varios levels of the bed are
determined, as well. Parameters effecting the drying characteristic of wheat and energy
consumption rate such as the temperature, rh and velocity of drying air, the amount and
humidity ratio of the product at inlet and outlet are controlled during experiments.
Influence of these parameters on the drying characteristics of wheat and also on the
energy consumption are investigated. This energy consumption has been compared with
the energy consumption of conventional driers used in the bulgur industry.
Mathematical models described in the literature are examined as well, and
findings from the experimental study are compared with the results of these models.
Mathematical models built for drying of particulate materials in a fludized bed are
therefore analysed and their discrepencies from the physical system built during this
study and the differences thus caused in the results are interpreted.
