Eskişehir’e gelen ziyaretçilerin yöresel gastronomi tercih ve deneyimlerinin gelecek niyetine etkisi

Abstract

Araştırmanın amacı; ziyaretçilerin yöresel gastronomi unsurları tercihleri, gastronomi deneyimlerine ait görüşleri, memnuniyet düzeyleri ve gelecek niyeti arasındaki ilişkilerin incelenmesidir. Eskişehir’i ziyaret eden insanlardan, basit tesadüfi örnekleme yöntemi kullanılarak 448 kişiden veri toplanmıştır. Anket formunda yer alan ifadeler güncel istatistik programında analiz edilerek, araştırmanın amacı doğrultusunda yorumlanmıştır. Katılımcıların özelliklerine ilişkin tanımlayıcı veriler, frekans ve yüzde değerleri ile incelenmiştir. Değişkenler arasındaki ilişkilerin ölçülmesinde korelasyon analizinden ve regresyon analizlerinden faydalanılmıştır. Araştırmada yöresel mutfak unsurları ile ilgili tercihler, gastronomi deneyimleri, mutfak unsurlarından memnuniyet ve gelecek niyeti değişkenleri arasında pozitif yönlü ve anlamlı ilişkiler tespit edilmiştir. Ayrıca yöresel mutfak unsurları ile ilgili tercihlerin gelecek niyeti üzerindeki etkisinde memnuniyetin kısmi aracılık rolünde olduğu saptanmıştır. Gastronomi deneyimi ise yöresel mutfak unsurları ile ilgili tercihler ile gelecek niyeti arasında kısmi aracılık rolü oynamaktadır

The purpose of the resarch; to examine the relationship between local gastronomy preferred elements of the visitors, their wievs of gastronomic experiences, satisfaction levels and future intention. Data were collected from 448 people who visited Eskişehir with using simple random sampling method. The statements in the questionnaire were analyzed in the current statistical program and interpreted for the purpose of the research. Descriptive data about the charecteristics of the participants were examined with frequency and percentage values. It has been benefited from correlation analysis and regression analysis to measure the relationships between variables. In the research, positive and meaningful relationships were determined between preferences of local gastronomy elements, gastronomic experiences, satisfaction and future intention. In addition, it has been determined that satisfaction has a partial mediation role in the effect of preference of local gastronomy elements on future intention.
