Monoterpens have been used in the treatment of many diseases since ancient times. The use of these natural compounds as Flavouring agents has also increased their importance more and more, recently.
In this study, the fungal biotransformations of isophorone, which is a monoterpene, and its analogue were carried out by Alternaria alternata, Neurospora crassa and Fusarium culmorum. The structures of the metabolites were elucidated by spectroscopic methods. Their biological activities were tested against some pathogenic microorganisms and the minimum inhibitory concentration values were determined.
It was observed that, 4α-hydroxy and 7β-hydroxy isophorone derivatives showed higher antimicrobial effects when compared with that of isophorone whereas ethoxy isophorone (1-hydroxy-3,5,5-trimethyl-2-cyclohexane) showed no significant antimicrobial activity
